Pumpkin Chia Seed Pudding
Our Pumpkin Chia Seed Pudding is so easy and will last for a few morning when you make it in bulk like this recipe.
Here’s what you need
1/2 cup pumpkin puree
2 cups Pure Mylk-Almond, prepared as milk
1/4 tsp vanilla
7 tbsp chia seeds
1 tbsp maple syrup, more if you like it a little sweeter
1/2 tsp cinnamon
1. In a blender combine milk, pumpkin puree, vanilla, cinnamon, maple syrup, and 1 tbsp chia seeds and blend for 1 minute on high.
2. In an airtight container mix the remaining chia seeds and the milk mixture whisking together while slowly pouring in the milk to avoid clumps.
3. Let the pudding set over night and serve up in the morning with your favorite toppings.
You can also pre-portion into jars and add topping to save time in the morning for an on the go breakfast.
