Eggplant Fries

Creamy Marinara
2 Tbsp Olive Oil
2 cloves of garlic, minced
1/2 white onion, diced
4-5 Tbsp tomato paste
1 Tbsp Italian seasoning
1 Tbsp oregano
2 Tbsp Pure Mylk- Almond Concentrate
2 cups water
Salt + Pepper to taste
1. Heat 1 Tbsp of olive oil in a nonstick frying pan on medium heat. Then add in the onion and cook until translucent, about 3-5 minutes. Add garlic and cook for an additional minute until fragrant.
2. Add in tomato paste and seasonings and cook until it turns a darker shade of red, about 4 minutes.
3. Add the pure Mylk-Almond concentrate and slowly whisk in water too the pan to incorporate all ingredients. Once everything is mixed well lower the heat to a simmer to reduce a bit.
4. Season with salt and pepper to taste
5. Serve with eggplant fries, pasta, favorite protein, anything really it’s so fresh and delicious 🤤 enjoy!
Eggplant Fries
1 medium eggplant, cut into fries
1 Tbsp sea salt
1 Tbsp olive oil
1 Tsp garlic powder
1 Tsp onion powder
Salt + pepper to taste
1. Cut eggplant into fries, I peeled mine this time, but it completely up to preference. Put fries in a bowl and toss with sea salt to remove some excess moisture from the eggplant. Let sit for 5 minutes.
2. Pat the eggplant dry and drizzle with olive oil and seasonings, toss to coat evenly.
3. Put seasoned eggplant fries in the air fryer at 400F for 14 minutes. You may have to do two batches depending on the size of your air fryer.
4. Top with fresh parsley and the creamy marinara and enjoy!
