Dairy Free Vodka Sauce

Do you like penne alla vodka, but not the dairy? Try this dairy free version that I assure you will change your life!
Here’s what you need:
1 Jar tomato sauce (I used Rao’s)
3 Tbsp of Pure Mylk Cashew Nut Base
1 glove garlic
¼ cup nutritional yeast
Pasta of choice (we used lentil Penne here, but I also love it with rigatoni)
Pasta water (reserve 1 cup)
- Prepare you pasta according to the directions, strain and reserve 1 cup of pasta water.
- Heat your pasta sauce until warmed through.
- Take about a cup of sauce and place it in the blender with the garlic, nutritional yeast, and cashew nut base. Blend until fully combined.
- Take the sauce in the blender and add it back to the sauce pan with the tomato sauce and stir until it’s fully combined.
- Top your cooked and strained pasta with the vodka sauce and mix to make sure all the pasta is fully covered with sauce. Add pasta water until you reach a glossy finish. Start with a little, stir and use your judgement. The amount of water will vary depending on the amount of pasta.
