Dairy Free Vodka Sauce

Do you like penne alla vodka, but not the dairy? Try this dairy free version that I assure you will change your life! 

Here’s what you need:

1 Jar tomato sauce (I used Rao’s)

3 Tbsp of Pure Mylk Cashew Nut Base

1 glove garlic

¼ cup nutritional yeast

Pasta of choice (we used lentil Penne here, but I also love it with rigatoni)

Pasta water (reserve 1 cup)

 

  1. Prepare you pasta according to the directions, strain and reserve 1 cup of pasta water.
  2. Heat your pasta sauce until warmed through.
  3. Take about a cup of sauce and place it in the blender with the garlic, nutritional yeast, and cashew nut base. Blend until fully combined.
  4. Take the sauce in the blender and add it back to the sauce pan with the tomato sauce and stir until it’s fully combined.
  5. Top your cooked and strained pasta with the vodka sauce and mix to make sure all the pasta is fully covered with sauce. Add pasta water until you reach a glossy finish. Start with a little, stir and use your judgement. The amount of water will vary depending on the amount of pasta.
  6. Enjoy!
